Making scrambled eggs is not rocket science, but to create the best scrambled eggs in the world, it requires the right tricks. So, grab your pitcher, and let's get started with the scrambled eggs on the portafilter!

Let's get started with the scrambled eggs!
We begin with the slices of toast, placing them on top of the machine to lightly brown and make them crispy. And now, let's start with the scrambled eggs in the pitcher:
First, we'll preheat our pitcher with hot water. Then give it a swirl so that the entire pitcher is preheated. Now add some butter to the pitcher and swirl well again to distribute the butter. This prevents the eggs from sticking later!
Next, we add three eggs directly to the pitcher. Add salt, pepper, and for that special touch, a pinch of nutmeg. Whisk everything together until you have a homogeneous mixture with bubbles forming. As a secret tip for a really fluffy result, add a splash of milk now and whisk again.
Now, heat the machine to 130°C. Give the steam wand a quick blow to release any condensation.
We start with the scrambled eggs in the pulling phase. This introduces air into the eggs, creating a fluffy consistency. Then, move to the rolling phase where you immerse the steam wand deeper to ensure thorough stirring. The eggs are ready when steam rises, and the fluffy mixture in the pitcher no longer moves. Thanks to the butter, nothing sticks in the pitcher!
Now just plate it up! Finely chop chives, garnish as desired with tomatoes, and there you have it - Huevos al vapor!
